I have just started trying this out and I suggest you try to! It's hard at first but if you understand the basic body of different breeds it not too hard! I do hope to see people in this chat! I haven't seen many on this topic though. I just use a pencil and colored pencils. And blend it to make the right shades. Here is a BO Rooster. To be honest I have yet to ever try pencil sketches of my birds. Tried once to do a pen sketch and I have painted a few times with acrylics. We lost our Rhode Island Red awhile back and painted her goofy expression on a memorial stone. Here's a recent Christmas ornament in acrylic on a wood slice for our two ducks
I'm on with drawing one of my Silkies now but it'll take me another good few weeks until it's finished It's a long process but I'll post it here when I'm finished it

Isn't it? There are a few artists I keep tabs on that are wizards with a pencil. The work they do looks like a greyscale photograph. I did this piece more recently, about a year ago. (What? It's not a chicken? Nonsense.)
