PLEASE HELP TIME IS RUNNING OUT!!! What is up with my EE eggs???

    I'm making deviled eggs for Thanksgiving and I had thrown some of my EE eggs with my others in the pot for then deviled eggs. I just peeled them and noticed something really strange about the EE eggs and now I'm scared to eat them. I HAVE eaten the EE eggs before but this is the first time I've hard boiled them. Ok, first, the white of the eggs is more translucent than the other eggs. When I cut them in half I noticed the yolk through to the center looked like a bulls eye, with dif shades of yellow making the rings. When I pulled the yolk out, there was another membrane around the yolk. ????? Then I was able to see on each EE egg yolk a little dark colored bulls eye that looked like the bulls eye that is the embryo. Now, while all of my eggs ARE fertile I have NEVER been able to see the embryo bulls eye before on one that was hard boiled. also if you squished the yolk between your fingers the center of the yolk fells rubbery. Is this just how an EE egg is made up? Are they safe to eat?? Or should I just go ahead and boil up some more of the brown ones? The EE eggs were NOT left under a chicken and had been gathered the day they were laid, washed, and then placed in the fridge.
