I'm thinking you have a pullet there. I'm about 80% sure of pullet. No reddening of the wattle area points me to this right now.

If you could get a pic of the bird stood and the whole body in shot would be great

Without the tail feathers it's a little harder to sex. If no wattles are showing I would say pullet but be prepared it could be a roo. They are hard to sex and can often keep you guessing for a while.

Polish do tend to be at the bottom of the pecking order and are easy to attack as they can't see so well because of the crest.
