possum (and other pest) recipes

does anyone have a good possum recipe? i've tried baking them but they are just too greasy. was thinking of boiling then with rice but that just seems a bit plain. yes i know there is a recipe forum but i figured the people most on here would know better than over there. any other recipes for pests would be welcome too.

I have to ask,how can anyone stand the taste of them.I have tried them cooked many different ways but have never been able to get past the taste.I have never ate them before but would have to compare the taste to cow patties.
