Processing Turkey for Thanksgiving advice

This was our first year doing meat birds. We have a few chickens left to process and a lone BBW Turkey that we plan on having for Thanksgiving. My husband and I are both wondering when we should process the Turkey to have it ready for Thanksgiving? We found with our meat birds that it took some of them 4 days to finish going through rigor mortis. Now we kept them in a cooler with ice water for that time, maybe it was just too cold for the process to take effect? Maybe processing the Turkey then putting him in the fridge until we cook him? Any suggestions on timing and what you do to prepare them for the holiday table would be greatly appreciated!
