Production Category Entry at County Fair

Does anyone know how hens are judged under a Production Category vs. Exhibition Category for example, at a county fair? How do they judge a hen's eligibility of laying so many eggs a year?
 
Hens are judged on past productivity of eggs. (how many eggs they have laid in their life) The judge usally looks for pigmintation around the bird. He also measures distance between the hens pubic bones to determine how wide it is. If they are far apart, it usally means the hen has more space for that egg to come out and this usally means eggs often are laid....Hopes this helps.
