A pullet is a female chicken under the age of 1.
A hen is a female chicken over age 1.
A cockerel is a male chicken under the age of 1.
A rooster is a male chicken over age 1.

The previous answers are for sure true in the show room. My grandad called them young hens when they began to lay. It is quite universal however that 1 year is a hen
