Quail for Christmas Dinner= Process help needed

Okay, so I have 3 Quails that I need to process for dinner on Thursday.

Do they need rest time like chickens do and if so how long?

Please don't hate me for trying the quails, I've never had them, and wanted to have fresh, chemical free birds.

Any help is welcomed.

I butcher 15 to 20 at a time. I let them rest in the fridge for 3 days before freezing them. I don't know if it's necessary, but I do it.

I've soaked quail in milk (buttermilk would be better) overnight in the fridge although most of the time I processed and then cooked immediately. If you have the time then soak or brine them. If not then just cook and eat them.

Yes, that link is very good but didn't commit one way or the other, which now confired by you all, makes sense!

Actually, I was trying to plan out my week, since my family never gets to celebrate holidays on the exact date, due to too many having to work on Christmas, traveling from out of town, etc. So Family on Tuesday and Wedneday, And I had made plans to have quail with my best friend on Thursday.

So I think I will process Monday night so all the disposable parts go out with garbage on Tuesday, it stinks pretty bad after a day or so, learn that from the one that comitted suicide the first night I got them.
