im a little bit new to raising chickens. im trying to learn all i can... my question is- do the feathers on a chick change color/pattern as they get older? does that make sense?

Yes most do in my experience but buff orpingtons to me which are a golden yellow color stay pretty much the same some just get a bit darker like the roos. But others like barred rocks lose that dot on their heads and change over to white and black baring all over their body.
