I've been using glass jars with holes in the lid to avoid it exploding.
However I've found a beer making keg we used for water storage. It's the type with a lid that has a hole in it.
Would this be suitable for fermenting?

Could I add dry feed as I scoop out ff? Or do I need to completely use up a batch and start a new one?

You can add feed to your batch every day. I put vinegar in once a week and just add feed every day. My current batch is about 3 weeks old now.
