ravioli w/sweet potatoes?

There are recipes using butternut squash as a filling & they are delicious : 9

I am growing sweet potatoes this year and they are almost ready to harvest.
This weekend I'll be making pasta with my eggs & wondered if I can devise a filling for ravioli using the sweets.

Anyone have a recipe or idea?
I was thinking of using thyme to season the potatoes and probably some carmelized garlic & onions.

I think thyme, carmelized onions and garlic sound great! I think I would add a little cinnamon and clove just to get that sweet potato pie hint. Then I would just toss the cooked ravioli with olive oil and parm.
 
i have eaten them before they are topped with a brown butter sage ... you brown your butter and saute' sage leaves in it then pour over your sweetpotato... squash... kind of ravioli.. delish

I was thinking of serving with aioli rather than a marinara-type sauce.

Katy: the cinnamon sounds like a great addition and maybe a 2nd batch with the gorgonzola (I love blue cheeses!)

vfem: pierogi sounds like a fun way to use them too
