I butchered my first cockerel today by myself and have a quick 'resting' question. I split the chicken in half and am not sure if I should rest the halves uncovered in the fridge or rest them covered (if so, in a bag, covered dish, ?). Since I split the chicken in half I dont want to rest it in water as it might wash out the exposed meat. (I will be cooking each half in two different ways after 48 hours of rest). The skin seems to be drying out really quickly when not uncovered but I read you shouldn't cover the chicken (if not in brine or salt water) with anything non-porous such as a bag or it will allow more bacteria. If it helps, I will be slooow roasting one half in a covered chicken roaster in the oven and the other half will be crock-potted. TIA!
