This is what I make - it is my winter treasure chest.
Into a big crock pot with a cover put berries and fruit as they come into season. I use blueberries (wild or domestic) cherries, currents (red), peaches, strawberries, concord grapes, choke cherries and whatever wild berries you grow but not blackberries - too woody. You can use things like pineapple but I only like to use what grows around here - if pineapple grows where you are - go ahead. Each time you put your fresh good fruit in - put some sugar and a cup or so of dark rum or brandy or cognac. Stir and I put it in the back of my fridge cuz we don't have a cold cellar but you could put it there if you do. Come Christmas or New Year scoop some out onto ice cream. Put some in a jar and bring it to your neighbors - you will be loved.
