Salads!

With the warmer weather starting.....I make a few different salads instead of cooking.

I make potato salad all the time I just love it....I eat the whole bowl over a few days so that is one salad I really can't live without.

I also make a bacon ranch pasta salad it has bow tie pasta and lettuce in it.....I think I am gonna make this soon but this time I am adding chicken in it.

I also love the salad with/chicken and top ramen noodles...cabbage and rice vinager not sure what it is called but I really like it.

These are my favorites so far.

Do you have any favorites and/or recipes please share?

(Caveat: I am doing these from memory so no exact measurements)

Strawberry Orange Pasta Salad
Combine cooked bowtie pasta with sliced strawberries, mandarin oranges & poppyseed dressing

Grape Salad
Wash & dry red & green seedless grapes - drying them is important or the other stuff won't stick
Make a dressing from 8oz softened cream cheese, powdered sugar & Coolwhip

And one from me:
Cantaloupe Cucumber Mint Salad
Combine fresh cutup cantaloupe & sliced cucumber with plain yogurt & chopped fresh mint

Also like roasted butternut squash with mixed greens, feta cheese & balsamic vinaigrette

lol, I wish you could. I just made potato salad and ceviche over the last few days. I am making one of the other 2 of my favorites real soon. I will take a picture for you

This is a pic of the bowtie/salad w/bacon and ranch dressing. I also added onion, green onion, and celery. No chicken like I wanted too.

I like to put a chicken in my rotisserie and serve it with this salad. I have my rotisserie set up in my laundry room so it doesn't heat up the kitchen in the summer time.

Cilantro Corn Salad

3 10-oz. packages frozen corn thawed
3/4 red pepper shopped
1/2-C. fresh cilantro chopped
1/4 C. green onions chopped

Dressing:
1/3 C. vegetable oil
1/3 C. white wine vinegar
2 T. Dijon mustard
1/2 t. fresh black pepper
1 T. jalapeno pepper

Prepare dressing by combining ingredients except the oil and whisk together. Slowly whisk in the oil.

Combine corn, red pepper, cilantro and green onions together in a bowl.
Pour dressing over and stir to combine. Chill before serving.
Makes about 5 cups.

The leftover chicken makes a good Chef Salad served with lots of boiled eggs.

Tuna salad sandwiches are good when you don't feel like cooking and heating up the kitchen.
 
Low Fat apple salad, yummo!

Two apples, granny or gala works well, cored and chopped in bite sizes
one cup of halved grapes, can be omitted
one cup mini marshmellows, or less if desired.
1/4 or less raisins
peanuts or walnuts or omitted, chopped (any amount you like)
two small container of vanilla yogurt

Stir it all up in a large bowel. Eat immediately. Delicious!
