Is it normal for a hen to hang out on the nest for a while after egg laying? I am at work when they lay most days, so I have actually only been around for the laying a time or two (that I know of). My head hen went in to lay an egg close to two hours ago, and is still chilling on the nest.

Well, she came out. No egg. Maybe she's a little backed up ;)

Speaking of broody hens, would a good broody hen be able to hatch eggs in a coop in upstate NY winter?

Yes, hens can hatch eggs in winter when it is very cold. All they will need would be some extra food and water.
