When should I take chicks away from momma hen, or should I?

What is the goal? Sell as tiny chicks or have as part of the flock?

If you are going to keep them, just let the hen raise them. She will take care of them, integrate them into the flock, and leave them when they are ready to be without her. Mother hens take good care of their chicks

Not necessarily. You can still socialize them while leaving them with mom.
