texas state fair and Fort worth stock show sign up questions

I wanted to talk to someone who has exhibited a chicken in one of these shows. I just have a few backyard chickens but I thought it would be fun to learn how to exhibit them. I am having a hard time figuring out what i need to exhibit my birds. Where do I get heath certificates and such. I only want to exhibit 4 birds. Can anyone give me some advice? This is just a big learning experience for me so any information is helpful.
