Trim all fat from meat, cut into 1/4" slices along grain of meat, combining dry and liquid ingredients. Marinate meat in this overnight. Drain and lay meat strips on oven rack , place foil in bottom of oven to catch drips. Set oven at 150 for 6 hours or longer with door ajar. Turn off oven and leave in another 6 hours or longer to finish drying.
You can also use a dehydrator which I do. Just follow the instructions in the manual.
6lb venison, cut in strips
1 cup soy sauce
1 cup lemon juice
1 cup red wine
1 cup molasses
2 pks dry Lipton Onion Soup, I crush mine with a rolling pin before I open it.
3 TBS sage
6 cloves garlic, pressed or 1/3 cup garlic powder
1/2 cup brown sugar (optional)
Mix ingredient, add venison, marinate over night
When I lay it out to dehydrate I grind pepper over it.
