#3 is most definitely a pullet. #2 is a roo. I also believe #1 is a roo, but with only slightly less confidence. I mostly have Orps, but I do have an Ameracauna/EE pullet that looks EXACTLY like your #3.

BTW, does ANYONE know what that color is technically called? I'd really like to know. She is the only one I have, and the only one I probably will have, so I won't get a chance to learn much except here.
