What causes water to collect in eggs being mailed through the mail?

I bought several new breeds of birds through the purchase of eggs. I'm not a novice at producing clutch rates at better than 75%. I think it would be higher but...
The folks I purchased from were online and very nice. I believe I was sent decent eggs. I'm not asking for a guarantee. But I store them for 24 to 36 hours, after first candling them. I've had several batches full of water between the two membranes. The eggs aren't processing and I think they are dead. What would cause this. I know it wasn't me. I'm very careful. My husband says I'm anal when it comes to the health of my birds. Does anyone have any idea what could be causing it. Some have been washed and most have not? I also placed 12 of my own and hatched 10. So I know it isn't my equipment!
 
I have had both low hatch rates and good hatch rates on shipped eggs. It seems shipping is bad on eggs and many end up messed up from it. The PO is the main culprit.

I think 75% hatch rate is pretty decent.
