Drumstick comes running in with the mail all excited. "Dad,
look at this envelope!! It's from BYC. I looked at the return
address and realized it was from MissPrissy.

It had some weight to it. I made Drum wait until after we had
tended to the dogs and chickens before opening it.

Inside was a bag of live active yeast the MP started herself.
Now we all know what an amazing chef MP is but this amazed me.
It even included instructions on how to "feed" the yeast.

MP's words: "I started the bread dough starter back in August 2008
by capturing a wild yeast common in the air we breathe"

This is by far one of the most unique, and educational gifts we have
ever received. WOW. SO COOL

In a few days you are going to bake some really good stuff. Sugary and chocolatey and yummy to kick off the Holidays in grand fare!

PC, it will start to change and take on a slightly different fragrance and taste the longer you keep it going. It will develop new flavors based on the natural occurring yeast in your area.

That is why no place in the country can make sour dough like SF, Cali. The yeast bacteria in the air there doesn't live anywhere else.

how do you collect wild yeast that is natural in your area?
