I know he is a rooster and I am assuming Blue Ameraucuana vs. Easter Egger. Is there any way to know for sure?

Look at his feet bottoms. If they're grayish pink he's a true blue Ameraucana. If they're yellowish, then he's got some EE in there somewhere. Personally, I'd say he looks like an Ameraucana.
