Each hen will usually give you an egg a day. If the roosters are mating with your hens, chances are the eggs are fertile. You could try cracking an egg open and looking at the yolk. Each yolk will have a white spot or "blastodisk" on it. If the spot has a bullseye ring around it, it is fertile.

So when they mate is it really fast cause it looks like they doing it then he stops real quick

Ok the roosters are trying but i can't really tell what's going on I'm used to breeding Pitbulls not chickens,do they get stuck like dogs do?

When chickens mate, there is no penetration. They simply touch vents.
