what do I soak my processed bird in?

    I just processed one of my roos and he's now in the fridge soaking in water in prep for tomorrow evenings supper, should I soak him in some kind of solution to tenderize the meat, if so what combination of ingredients should I use?? [​IMG]

    My mom soaked hers in buttermilk.

    Some use ICE water... others use cold water with salt added.

    I always did cold salt water. The buttermilk idea sounds yummy though, try it! [​IMG]

    I researches recipies before processing my first birds and ended up doing what I do every year with Thanksgiving Turkey. I brine in water overnight with just about a 1/4 cup of salt and acouple cups of orange juice.
    I have processed many Coturnex quail this way also.[​IMG]

    I've also heard of people using applecider vinegar. have not tried it myself but give it to all my birds in their water (even meaties) I say if it's okay to drink...should be okay to soak in? Right? If someone has tried it please let me know.

    I have heard those tough birds are delicious if cooked all day in the crockpot!
