What is an unbarred cock? Thinking about Marans and would need a proper Roo. Name some choices please.

Here is what it all boils down too:

The sex-linked barring gene of the chicken (Gallus gallus), first identified in 1908, produces an alternating pattern of white and black bars in the adult plumage.

If your Rooster doesn't have the bars it is unbarred.
