What is the best way to breed chickens for show?

I am wanting to start breeding silkies and bantam cochins. My original plan was to have 6 different pens for 6 flocks, but I recently went to a show and met guy who said that he liked to pair birds up and breed that way. I would like to hear everyones opinion.

I breed rir and I breed my cockerals to my hens and my cocks to my pullets. That way you want breed brother to sister. With bantams I would do pair breeding, but it would get to expensive with large fowl.
