So our run is finished, mostly, but I'm wondering what to put down on top of the dirt. Sand will wash down the hill when it rains, I assume. Suggestions?

Just use the dirt then ~ the rain will help and you can "clean up" just as you would with sand.
    Good luck!

My run is on a hill and I just have dirt and when it rains the poop usually wash away for easy cleaning!

We've got a slope -- not steep, but a slope. It's the absolute best! No puddles, no muck even in the heaviest downpours. We did put a 2-3" layer of lawn clippings down to help the soil retain some moisture. It's working well!
