When people name their farm...

they often use the plural form, "Farms".

Like "Joe Cool Farms" or "Oliver Cloesoff Farms."

Why is this? Don't they typically have just the one farm?

I could be way off base here, but I think it's because they "farm" more than one thing. Example: Eggs and cattle or cattle and strawberries. Just a guess.
 
it's generally because they have more than one property that they farm.

we use the term 'farms' the way gritsar is explaining. we have a tiny little 5 acre farm with lots going on.

my opinion is, if you like a name, use it.

We refer to our farm as Alberti farm or Fiona's Rest depending on where talking about it. Fiona's Rest (named for most beloved horse) is the name of our CSA which is just barely off the ground. Alberti farm as in "There Shall Be No Unauthorized Breeding On Alberti Farm" is more of a personal family name.

You do. It doesn't have to be some legal deal or anything. You can call your place anything you want to. We incorporated our farm name because it just makes it easier for us to do business that way, but we didn't HAVE to.

i use the plural on account of multiple sites.
i do business as mellifera farms. you get extra credit if you know what it means.
