How old should I let my barred rock roosters and my blue laced red Cornish bantams get before butchering them?

It all depends on what you want to use them for. For roasting, you'll probably want to slaughter at not much more than 20 weeks, but you won't have much of a big carcass - still tasty though.

If you want stew or stock, let them live as long as you can stand them. I've processed two year old birds, they make the best stock.
