Yolks

Question:
We are making deviled eggs for a cook out today. Was able to peel them perfectly, but why are the yolks close to one side of the egg and not centered? Makes it hard to keep the white intact in order to stuff them. Does anyone know?


P.S.
The eggs are not fresh. They are about two weeks old.
 
Were they stored in a carton, pointed end down? That makes a huge difference, though you still find a few siders.
 
I was told once to lay all the eggs for boiling on their sides the night before to center the yolks. I havnt tried it yet because i always forget but.......
