I made this dish the other night. My mom had another name for it but I can't remember. Anyway, I changed it a bit from how she did it and it was great. What you need
Zucchini(this is acting as the lasagna noodles)
Ricotta cheese
Eggs (to mix with the ricotta)
Mozzarella cheese
Provolone cheese (optional)
Parm Cheese
Sauce, I used alfredo, my mom used spaghetti sauce
Orzo pasta
Garlic and Onion Powder
Sorry, I don't measure anything, but this dish is more of a 'play it by ear' type of thing anyway.
First you cut your zukes length wise, about 1/2 inch thick. Mix your eggs with your ricotta, you can also add any spices you like. It is really simple, just layer everything, orzo (thin layer), zuke, ricotta, provolone, sauce, mozzarella. Repeat until you have your lasagna pan filled ending with mozzarella on top. I baked mine at 350F for about half an hour. At the end I sprinkled on the parm cheese and put under the broiler. The orzo will soak up all the water from the zukes. Important to let it stand for about half an hour to cool and set up. Next time I think I am going to add some cooked chicken. Everyone loved it.
