zucchini lasanga

    make as you would lasagan except subsitute the noodles for the zucchini cut the long ways.... bake until zucchini is tender about 20-30 minutes at 350

    My mom used to grow the most beautiful eggplants you have ever seen. They were beautiful to look at but I wouldn’t touch one with a ten-foot pole.

    Then one day she put a dish of Italian food in front of me and it was some of the best I had ever had. It was eggplant Parmesan.

    She sliced the eggplant and breaded and fried it then used the fried eggplant like lasagna noodles. Boy was it good.

    But I still don’t eat eggplant.
