This time of year zucchini and yellow squash seems to start piling up. I came up with this kid-friendly recipe that uses a lot of zucchini and eggs:
* 5 eggs
* 3 cups grated zucchini or yellow squash
* 1 1/4 cup all-purpose flour
* 1 teaspoon white sugar
* 1/2 teaspoon salt
* 3 tablespoons oil
* 5 teaspoons baking powder
* 2T butter, melted
* 1 cup milk
You may need slightly more milk. Whisk lightly until you have a cake-batter consistency. Bake 'em up in your waffle iron, throw some syrup on them and the (non-feathered) peeps will be scarfing down their vegetables! Freeze leftovers for a quick breakfast.
