Perhaps I have missed it. But, I can't find via search any information on when Embdens mature. I see typical weights listed as 20-26 pounds. When can that be expected?

At full maturity. Some geese can take up to 2 years to "fully mature". A two year old goose is much thicker and fuller than a one year old.
