Last year I processed at 12 weeks and had weights as high as 8 lbs dressed. Typically they average around 6.5 - 7 lbs. The taste is amazing compared to commercial cornish breeds. A ton of flavor, and better texture.

I may be wrong, but I believe they only hatch out the breeds that are ordered, plus a few extras for eggs that fail to develop. I think that is why there is a roughly 4 week wait on them.

Will anyone have chicken saddles available this year? I need to find a couple for some of my hens. They are starting to show a little feather loss from my rooster's habits.
