I use crumbles and when the bowl gets down to the dusty powder in the bottom I add a little water and make a moist mush for them. I feed them in a large 2" lipped plant water catcher and so they dont waste any.
Sand is the best answer. We built the coop and run over a sand pad we had used for our above ground pool. Drains so nicely, dries fast, less smell. I rake the run to stir things up weekly and kitty litter scoop in the coop also put 2 containers under the roost to catch all the night time poo.

I put Sweet Pdz in the coop sand and simply rake the sand weekly in the run. My sand is 8-10" deep (was a previous sand bed for a pool). Honestly very little smell.

I make Kefir all the time with pasteurized milk and have for 5 years. The natural milk enzymes might be dead in the milk, but Kefir eat the sugars so YES you can make good Kefir in pasteurized milk. (in reply to someone who said you need raw milk)

I grew up on a farm and we had soybean fields around us as far as the eye could see. The local birds always ate these soybeans, especially at harvest time. I do not remember anyone say they made birds sick?
