From my experience, if you just see feathers and no body it's likely a coyote or fox. They usually grab & go. A pack of dogs killed about 35 of our chickens within a weeks time last year but left the carcasses behind. A hawk would've done the same especially with a rooster so large.
I've noticed when our chickens refuse to go back in the coup following some kind of attack, the culprit has been an opposum more times than not. We put out a trap (the friendly kind) with some tuna to see if we can catch them and drive them far away from the farm.
