I am about to start pricing birds of all sizes, from quail to large turkeys for resale. I know I can process and vacuum pack them efficiently. That being said, for those of you selling to customers, friends, restaurants, etc, what do you get for your birds?

I have some turkeys I need to get outdoors, would it be ok to keep them in the same tractor as my cornish X's? Space is not an issue, I built a huge tractor for just such an occasion.

Mine are probably around 9 weeks and still growing strong. Why is it recommeneded to butcher at 8 weeks? I have ate several, and think they would do fine (and continue growth) for several more weeks.
