Starters should go up to about 8 weeks max. Starter and Growers can wait about 16 weeks. After that, just give them layer feed.
And I don't know about this whole 6 month thing, for my hens have laid their first few eggs, and they were born in March.
I love them all! But if I had to say which was my favorite, I'd choose either Buff Orphintons, Polish, Silkie, Salmon Favarolle, Wyandotte, and more and more and more...

If the poop looks like it is under the abnormal category, it could be coccidiosis.
God, I hate it when they do "males for warmth" myself.
I'd separate the breeds, and keep 1 rooster for each breed. If they've made it so 1 entire breed is roosters, ( ) you should only keep 1 of them.
It's almost impossible to tell now, unless you look up their vent, and even experts sometimes get it wrong there. I think you may just have to wait a little while.

I also would recommend Polish. Though they're not reliable with laying, they are very sweet and I've had a Black crested lay almost every day.
Layer Feed- Layer feed is for hens and pullets that are laying eggs.
Scratch- Scratch is a special food that most chickens will go crazy for.
Grit- Grit is basically just rocks, dirt, etc. to help their crop.
Run- Runs are areas that chickens are allowed to mill about in when they can't play in...
They'll often have worms in their poop and pale combs. To treat, I'd give them antibiotics and yogurt. But they've never had them before (knock on wood), so I've never tried the method.
