If I were feeding vegan I would ferment the feed, as that makes the protein more available and easy to digest. You'll find lots of info on that here on BYC.

The only thing with feeding them their own eggs is you would need to scramble them first. Otherwise if a hen goes broody the others will attack her for it and you would have a bloody mess. Encouraging them to eat their own raw eggs is not good- would you encourage them to eat their own chicks...
The chickens will suffer on a vegan diet. Actually, its impossible. They will eat insects, each others feathers, and their own eggs. Free-range chickens will eat rodents, baby birds, lizards, snakes and other animals.
You could buy or mix your own mostly vegetarian diet, but not a vegan one.
