@U_Stormcrow gave me good advice about the roof and DH watched a bunch of YouTube videos on it. We got the screws from the supplier of the metal to make sure we got the right ones.

Note: It was also built on a slope so that made the height greater than it would have been on flat ground.

Doesn't sound extreme to me. Neuchickenstein is 6-7 feet at the back and about 10 feet (or was it 12?), at the peak of the clerestory. Height is good in a hot climate. It gives the heat someplace to go.
