    This is one of those little things that it takes a couple times to figure out - and nobody ever remembers to tell the newbies (and is good advice). Tight skin also makes it easier to avoid the feathers, which are the big obstacle for making quick clean deep cuts.

    If you're going to do it at dusk, and it's your first time (and you're doing it outside), make sure you have plenty of supplemental light. The last batch I did I started too late in the day, and it's really not pleasant to do when you don't have enough light. everything takes longer.

    Yeah, I do this too - my first time processing I put some weight on one of the dead birds and compressed the chest cavity - made some noises as the air was forced out - I freaked out a bit. When there's no head I know any wooshing or whistling is just air rushing out.
