They mature slowly. Pullets hatched late in season can sometimes lay at 6 months if well fed and exposed to supplemental light. Mine otherwise are eight months at least and onset is more a function of increasing photoperiod following the winter solstice.
The last bird you post does look like a game. I was going by overall body shape and type of feathers for others. The flightiness has more to do with rearing environment than actual genetics in this case. With some work you can tame them down quite easily.
All appear to be a mix and do not repressent a breed of chicken or strain of game. Thus you will likely be trying to determine the color variant. That is best addressed with folks into color genetics.
