Hatcheries don't cross their Giants with their Australorps. They just don't breed with standards in mind. They select for production rate only. This is why hatchery stock, regardless of breed, look nothing like what they are supposed to.
You have Australorps. You can not will them into being Jersey Giants. I'm sorry you didn't source from a reputable breeder. Next time, do a bit more research before you decide to purchase birds from a 'breeder'.

The get about 5 pounds if female, and approximately 8 pounds if male. Which is, ironically, the same size as hatchery sourced Jersey Giants. Your birds are likely bred from hatchery stock.
