Chickens only pooping once a day?

I took over my daughter's two chickens less than 2 weeks ago when she moved. They are about two and a half years old. I'm feeding them the chicken food they've been eating for a while. It's in a hanging feeder a couple inches lower than the smaller one's back. They've also had cabbage, sunflower seeds (shelled) brussels sprouts , mulberries and a bit of cooked beef for snacks. I'd like to let them free range over the whole yard, but when I tried they didn't go back to their coop, I had to pick them up and take them. They have both laid a couple of eggs. They seem fine, digging up the grass where ever I move the tractor coop. What poop there is looks like it's supposed to. So what does so little poop indicate?
 
From what you said you have fed them it sounds like they should be quite happy... I am sure they're pooping enough, I wouldn't worry bout it. When you did let them free range and you say they didn't go back in their coop... what time did you give up on them going in alone and go pick them up? I have never heard of chickens not figuring out how to go into their coop themselves.. other than maybe roosting up in a tree instead of going back to their coop.. but at 2.5 years old I think they would be so used to their coop thats where they would be most comfortable to go... I have to guess that maybe you didnt wait long enough? During the summer when its light for quite sometime i have some chickens that go in the coop right around 7pm some that wait till almost 9pm...
