I am getting ready to set some eggs. Hoping that 10 days isn't too long to keep some of the eggs. I am going on a trip and wonder how long once hatched can quail stay in the incubator with no food and water? If I set them when I want to, some might hatch on a Friday, or Saturday and I would be back on Monday..... I say Friday because I ususally end up with my eggs hatchng a day or so early. I also am one that cant stop looking and have been told that I cause some not to hatch because I don't leave them in long enough. My first hatch of quail, they hatched out over a 5 day period.

I never let eggs sit longer than 7 days. Imo, game birds can't go more than 2 days without food/water once hatched. I don't open my incubator once my eggs go into lockdown. That just my opinion, and also what works for me. Everyone has their own way of doing things. Best of luck.
 
If you're raising these birds as your breeding stock I wouldn't leave them in the bator too much longer than 24 hours.

On page 4 of this research (right hand side of the page about half way down) from UC Davis you'll find some data on the hatchability and fertility of coturnix eggs held for different periods of time.
