Guinea For Dinner Question

What is the best way to cook a guinea?

And suggestions for sides would be appreciated.

I would follow the same instructions you would use for any dark meat fowl. What happened, did the noiise finally get to ya LOL !?

I have an excess of boy guineas and I came home from work to find a couple of them fighting. It reminded me of a high school fight with 2 really going at it and the others all grouped around watching, cheering, jeering. They bloodied this guy's head and I grabbed him before serious (or fatal) damage to him could occur. It was a very minor scratch on his head.

I think I still have one too many boy guineas. Even though this guy is in a cage, I have to keep it covered because they come over and peck and fight with him through the bars.

I wanted to try one anyway. I've heard they are good.

I was wondering about a slow roast. He should dress at about 2-3 lbs. He's about 4 months old so should be tender yet.

I was wondering about times and temps.

They are noisy. But fun.
