He's doing it mostly for weight reasons plus the sugar he was eating was making his arthritis worse. I kind of follow along with what he's doing but can't eat all that meat & fat but I am getting a lot more vegetables in my meals now.
I love the vegetables. I like my potatoes and tortillas, so that's my only real sacrifice. I have to indulge in a cinnamon roll occasionally too.

DH just started the keto thing about 2 weeks ago. So far he claims it's cured all his problems except having to work for a living :gig
I’m glad it’s working for him.
 
Baking addiction has come to a standstill. I don't miss eating the bread stuff so much but my sweet tooth is unhappy. And I do get a lot of enjoyment out of just the act of baking.
I’m sure, that’s too bad! There are ways to get around the flour and sugar. Almond flour works pretty well. Also, monk fruit sweetener can be used in exchange for sugar. It’s not cheap, but could be used for occasional treats and doesn’t leave a nasty aftertaste.

I've seen recipes calling for monk fruit sweetener but wasn't sure I wanted to go there. I'll be more likely to check it out now that you've said there isn't an aftertaste. Thanks!

Definitely agree.
I use a lot of almond flour, pecan flour, and a little coconut flour. I keep my cabinets stocked with monk fruit in classic, "brown sugar", and "powdered"
I keep the refrigerator stocked with heavy cream, butter, and cream cheese.
I also keep frozen cauliflower "rice" and "mashed potato" for sides.
It helps a lot to know that we can still eat sweets and faux potatoes and rice.

I think the monk fruit will suprise you. It is the only alternative sweetener that I like. It's about $25 for 3lbs on the Walmart and the Amazon site, for the Lakanto brand. The brown and powdered forms are a little more, but worth it, in my opinion. Swerve is really good too.

I can’t do all that fat and meat either so I got a sous vide machine to try. The extra fat isn’t always necessary, and I feel a little better about cooking with oil at a lower temp.

Janie is the one who had mentioned it in the past. Lakanto is the brand, sometimes available at walmart. I use it in my coffee so didn’t care for the golden version but the white one is fine.

Just an FYI I made the pb cookies with it, didn’t like it. The cookies seemed a little dry and way too sweet after they cooled. I haven’t had time to mess with the recipe, but was thinking I’d cut back to half a cup and try again. I’ve noticed the sweet comes out more when things cool off, both solids and liquids.

Also, look into Keto fat bombs for treats. There are some yummy ones out there!
