Out of the 3 breeds you are considering, I've only had the Sussex in my mixed flock. They are sweet-tempered birds and I enjoy them. No matter what breed you decided to go with, spending time with your birds is key to making them people friendly and tame.

But adding a warning on breed characteristics, in my experience with just a few chickens, the breed characteristics are only a tendency, and each chicken will demonstrate their own unique personality.

Welcome to BYC. Glad you decided to join our flock. Breeds that have a well deserved reputation for being calm and gentle (potential lap pets) and good layers include Australorps, Orpingtons, Brahmas, Sussex, and Faverolles. If high egg production is a priority, Australorps are the best layers on this list. Whatever breeds you decide to get, good luck with your flock.
