I will be storing my eggs unwashed in the pantry. If I boil the egg I am not worried about bacteria. My question is if I want to break some open for frying do I risk contaminating my food? Should it be washed right before I crack it?

My answer is based on chicken eggs in Denmark, but I guess it can be reused here. Personally I wouldn't worry unless there is actually poop on the eggs, but to get rid of bacteria on the shell, it is recommended to place the egg in near-boiling water for a few seconds before cracking it open. Just washing it probably won't make much of a difference.

washing would remove the bloom from the egg and any potential contaminant, but as stated unless they are dirty or have poop on them i wouldn't bother, just crack and fry as usual.
